johan & nyström Peru Incahuasi Apaylla coffee beans has a particularly pure taste profile with tones of pear, caramel and mandarin and it is super exciting to present such a good coffee from a relatively new source of specialty coffee. The rosters first trip to the Incahuasi Cooperative in Cusco was in 2015 and they were taken by the beauty of the region, with amazing views but above all the great potential for coffee cultivation. The members of the cooperative grow their coffees at staggering heights of 1800-2400 meters above sea level. The cooperative has more than 300 members and in order to support all of them, there are several collection stations deployed across the large mountain. From these, this exceptional microlot has been collected.

- The varieties grown are a lush blend of Typica, Caturra and Bourbon, and the fact that the farms are so isolated is said to be the reason that despite organic farming they are free from rust fungi and other diseases.

- The altitude of coffee growing plays a big part in the taste. At higher elevations, the difference between the temperature of day and night is greater, which makes the beans more compact, get a higher acidity and more complexity.
