Colombia La Negrita Geisha is the most exclusive variety of coffee that is loved for its wonderful and complex taste. This Geisha is grown by the farmer Mauricio Shattah in Tolima, Colombia.
After completing his medical studies, Mauricio Shattah decided to engage in high-quality coffee. Mauricio and his wife Liliana searched for five years until they found the perfect farm, La Negrita. The farm is located at 2000m altitude in Tolima, Colombia, near the Nevado de Tolima volcano. The proximity to the volcano and its rich soils and four natural water sources gives the farm ideal conditions for growing coffee. The surrounding mountains provide protection so that all 8 hectares of coffee grow in the shade. The team at La Negrita is constantly trying to improve and develop how the coffee is grown, which constantly drives the quality up.
This lot of red Geisha is first treated as a natural for 3-4 days in the shade to improve roundness and texture. A certain yeast strain is added to better control the process. After four days, the coffee is pulped and processed as a honey. But at this stage Mauricio adds tartaric acid, which is usually found in fruits and berries. Mauricio's theory is that the acids change the structure inside the coffee and release more of its natural inherent flavors. The coffee is completely dried in the shade on raised beds to 20% moisture content. Then the last 10% moisture is dried off in low temperature in special dryers to ensure even drying for higher and more uniform quality.
